New Executive Chef - Sebastian Chaoui

Estuary at ONE15 Brooklyn Marina, is delighted to announce the appointment of Sebastian Chaoui as the new Executive Chef.

Chef Sebastien Chaoui brings to Estuary Restaurant and Ebb & Flow Bakery at ONE15 Brooklyn Marina, 20 years of cooking up creative and innovative dishes as both a savory and pastry chef. 

Born in France, Chef Sebastien started his career as a line cook at a 2-star Michelin restaurant in Paris, France. He honed his skills working in a range of restaurants, rising through the kitchen ranks and has been pleased to receive accolades from dignitaries and celebrities in France. Arriving in Brooklyn in late 2000, Chef Sebastien brought more range and depth to his personal style adapting to the taste of his new-found home at a range of eateries in New York City and by creating his own catering company for luxury brands at Fashion Week, as a personal celebrity chef and even opening a bakery in the Bed-Stuy neighborhood, his neighborhood today.


As the Executive Chef at Estuary, Chaoui oversees operations at the restaurant, Ebb & Flow Bakery and in-house events.

He aspires to establish Estuary as one of the first outposts in New York City of his take on American “bistronomy” — the melding of new American fare with culinary movement in France which marries the refinement of haute cuisine with the sensibility of casual bistro dining.
